Labor Day unofficially marks the end of summer. As far as menus areconcerned, many folks will celebrate it much the way they didMemorial Day, summer's unofficial beginning, with a barbecue orbackyard picnic. That means brisket, ribs, chicken, hot dogs,steaks and burgers.
None of which I eat. I partake of some seafood, but no red meat,turkey or chicken.
It wasn't always that way. My mom used ground beef in almost allour dinners: meatloaf, spaghetti, chili with beans, tamale pie. Myfavorite was hamburgers. She fried them in her cast-iron skillet,with a hunk of Cheddar cheese melting on top. She served them onhearty sandwich rolls, grilled in the same pan, with lettuce andtomato. I can still taste them. When I gave up red meat, I missedthose burgers the most.
In my desperation for satisfying replacements, I got creative.First it was turkey burgers. Then I gave up chicken and turkey,too. I moved on to Boca Burgers, using a frozen, ready-made soyproduct in the grocery freezer. Alas, they don't really taste likeanything.
Then I began developing my own recipes and searching online.Black-bean burgers, veggie burgers, salmon, mushrooms, shrimp. Irecently had a dinner party where I served black-bean burgers to,yes, meat eaters. They loved them.
